Instructions:


  1. Preheat oven to 375 degrees.
  2. Lightly wet a cutting board and cover in plastic wrap. Place pork medallions on cutting board spread at least 2 inches apart from each other and cover with plastic wrap. With a mallet, pound pork in a circular motion making sure not to rip the pork. Pound until about ½ centimeter thin. In a bowl mix flour, 1 tsp salt, 1 tsp black pepper, 1 tbsp garam masala. Place pork in flour mixture and coat making sure to shake excess flour.
  3. With a sharp chef's knife, diagonally slice asparagus about ½ inch long. Julienne red onion and red bell pepper.
  4. On medium heat put ½ packet of olive oil in sauté pan. Sauté all vegetables with 1 tbsp garam masala, 1 tsp salt, 1 tsp garlic powder, 1 tsp black pepper until soft. The onions should look translucent.
  5. In medium pot boil 2 cups of water then add orzo, cover and cook for 7 minutes. Drain remaining liquid in fine colander and return to pot and add 1 tsp salt, 1 tsp black pepper, and 1 tsp red pepper flakes.
  6. Heat a sauté pan on medium with the remaining olive oil and sauté each side of the pork for 2 minutes. Place two of the cooked pork medallions on a skillet or baking sheet. Evenly distribute the vegetable medley on the two medallions. Take 1 ½ oz of goat cheese for each cutlet and top the pork and vegetables. Use the other two cutlets and place on top of the cheese and put in oven for 1 ½ minutes.
  7. Remove from oven and serve over the orzo.

  • 3 oz asparagus
  • 1 small red onion
  • 1 bell pepper
  • 2 oz goat cheese
  • 1 packet garam masala
  • 1 packet black pepper
  • 1 packet fine sea salt
  • 1 packet garlic powder
  • 1 packet olive oil
  • 1 packet red pepper flakes
  • 1 packet gluten free flour
  • 1 packet orzo
