Prosciutto Wrapped Chicken Over Garlic Spinach Orzo

This Mediterranean-inspired dish will be a house favorite as soon as you take your first bite. Tender, juicy chicken breast is already satisfying, but wrap it in prosciutto and you have one of the best combinations in the world. Serve over a bed of delicately seasoned garlic orzo with wilted spinach, and you've got a meal that’s anything but ordinary.

Instructions:


  1. Preheat oven to 425 degrees.
  2. Bring 4 cups of water to a boil in a pot.
  3. Season both sides of the chicken breasts with half of the pepper packet. Wrap the chicken breasts using the prosciutto.
  4. Bring a medium skillet to medium-high heat then add half the packet of olive oil. Wait 45 seconds then place the wrapped chicken breasts carefully into the skillet and sear for 3 ½ minutes then flip over and immediately finish in oven for 10 minutes.
  5. While the chicken is finishing, add 1 packet of orzo and ½ of the garlic salt to the pot of boiling water. Cook for 10-12 minutes until al dente and strain.
  6. Remove the chicken from the skillet, bring to medium heat and add remaining oil. Add bag of spinach to skillet until wilted, then add your strained orzo, the remains of your pepper and garlic salt packets and mix.
  7. Place orzo on bottom of either a bowl or a plate, slice your chicken on the bias and top the orzo.

  • 4 slices prosciutto
  • 4 oz baby spinach
  • 1 packet orzo
  • 1 packet olive oil
  • 1 packet black pepper
  • 1 packet roasted garlic salt
