Pecan Chicken With Maple Sweet Potato Mash & Garlic Brussel Sprouts


Buttery pecans form a delicate crust over perfectly moist chicken, giving it a soft crunch and rich taste. Mashed sweet potatoes bring a lively sweetness to the dish when dressed up with hints of maple. Garlic roasted brussel sprouts put a smile on the faces of even the pickiest eaters. The dish is easy to serve, and even easier to eat.

  1. Preheat oven to 425 degrees.
  2. Bring a large pot of water to a boil then add sweet potatoes and cook for 12 minutes.
  3. Chop pecans into small pieces and put in bowl. Brush or rub Dijon mustard on one side of the chicken breast and press that side down on the chopped pecans until coated on one side.
  4. Heat a medium ovenproof skillet over medium heat. Use half of the canola oil packet and wait 40 seconds then add pecan chicken and cook without moving chicken for 1 ½ minutes. Carefully flip over chicken and place in oven for 12 minutes.
  5. Drain the water from the sweet potatoes and carefully take the skin off the potato. Mash the potato then add maple syrup packet and mix well.
  6. Cut off the stem end of brussel sprouts and cut the sprouts in half. Heat a medium skillet over medium heat. Add the remaining canola oil. Wait another 30 seconds then add the brussel sprouts and ¾ the packet of roasted garlic salt. Don't move pan for 2 minutes. After 2 minutes start moving the brussel sprouts around in the pan. Cook for another 8 minutes making sure to keep the sprouts moving every minute.
  7. Plate with the chicken pecan side up.

  • 1 packet maple syrup
  • 1 packet canola oil
  • 1 packet Dijon mustard
