Mustard & Herb Tofu W/ Maple Sweet Potato Mash & Garlic Brussel Sprouts


Vegetarians rejoice! Tofu is easy to prepare, and even easier to eat – carnivores will love it, too. It develops a beautiful crust when coated in herbs and mustard, giving it a crispness that gives fried chicken a run for its money. Sweet potato mash and Brussel sprouts are the perfect sides, with one adding maple sweetness and the other bringing a layer of zingy roasted garlic to the table.

  1. Bring a large pot of water to a boil then add sweet potatoes and cook for 12 minutes.
  2. Drain the water from the pot and carefully take the skin off the potato. Mash the potato up really well. Add maple syrup packet and ¼ packet of salt. Mix together well.
  3. Cut ends off brussel sprouts and then cut in half.
  4. Heat a medium skillet on medium. Add ½ of the olive oil packet. Wait 45 seconds then add the brussel sprouts and the remaining salt. Don't move pan for 2 minutes. After 2 minutes start moving the brussel sprouts around in the pan. Add packet of roasted garlic and cook for another 8 minutes making sure to keep the sprouts moving every minute.
  5. Open tofu package and drain excess liquid. Cut into rectangular slices. Place the tofu on a paper towel and pat dry. Season both sides of tofu with 1 packet of French mustard & herb blend.
  6. Heat a medium skillet on medium. Add remaining olive oil. Wait 45 seconds then add tofu. Turn the tofu only once after 3 minutes. Cook for an additional 3 minutes or until crispy.
  7. Plate your sweet potato mash with the brussel sprouts. Build your tofu top of them.


  • 8 oz tofu
  • 8 oz brussel sprouts
  • 2 sweet potatoes
  • 1 packet fine sea salt
  • 1 packet olive oil
  • 1 packet maple syrup
  • 1 packet French mustard & herb blend
  • 1 packet roasted garlic
