Honey Mustard Glazed Salmon With Green Beans & Red Bliss Scalloped Potatoes


Healthy doesn't have to be complicated. Glazed salmon is as easy as it gets without sacrificing any flavor or nutrition. The honey mustard glaze creates a nice layer of flavor on top of the salmon, while crisp green beans add crunch and color. Scalloped potatoes with pecorino cheese are the perfect salty compliment to the dish.

  1. Preheat oven to 425 degrees.
  2. Bring 4 cups of water to a boil.
  3. In a bowl mix the mustard and honey packets.
  4. Brush the honey mustard over the top of the salmon filets then put them on a non-stick baking sheet and cook in the oven for 10 minutes.
  5. Fill up a mixing bowl with water and ice cubes. This will be your ice bath for blanching the green beans.
  6. Boil the potatoes for 5 minutes. Remove the potatoes and add them beans for 1 minute then remove the beans and place them in your ice bath for at least 3 minutes. Thinly slice potatoes.
  7. Heat a medium skillet on medium heat. Add packet of olive oil to the skillet and wait 45 seconds. Carefully add potatoes and sauté until they are crispy.
  8. Add blanched green beans, salt, pepper and pecorino in same skillet with potatoes and cook until beans are heated through.


  • 2 salmon fillets (6 oz each)
  • 12 oz small/baby red potatoes
  • 6 oz green beans
  • 2 oz pecorino cheese
  • 1 packet olive oil
  • 1 packet black pepper
  • 1 packet fine sea salt
  • 1 packet honey
  • 1 packet roasted garlic
  • 1 packet mustard

  • Sauce brush (recommended)
  • Ice bath
  • Large pot
