Grilled Chicken With Charred Romaine Caesar Salad

Grilled Chicken With Charred Romaine Caesar Salad

Flame-grilled chicken meets its perfect match when served over a bed of charred romaine, sweetened with a pistachio lemon caesar dressing. The greens hold a smoky richness that complements the nutty subtleties of pistachio and bright citrus.

  1. Season both sides of chicken with ½ packet of salt and ½ packet of pepper. Evenly distribute ½ olive oil packet and grill on medium heat for 6 minutes each side.
  2. Cut romaine in the middle lengthwise. You will leave the end on to keep the leaf lettuce together. Cut lemon in half and squeeze over all of the romaine. Drizzle the rest of your olive oil over the romaine.
  3. Season with rest of salt and pepper packets. Grill on medium heat for 2 minutes.
  4. Smash pistachios.
  5. Take your grilled romaine and plate 2 of them on a plate crossing it to make an X.
  6. Drizzle Caesar dressing packet over dish. Sprinkle parmesan cheese all over and garnish with chopped pistachios.
