Chipotle Honey BBQ Salmon W/ Mango Salsa & Quinoa Salad

Instructions:


  1. Preheat oven to 425 degrees
  2. (Recommended) With a sealable large sandwich bag, pour half the olive oil packet in with the packet of chipotle BBQ and shake until mixed. Place salmon in the bag, seal and refrigerate (make sure salmon is coated) while you prepare the cold sides. If you don't have a bag just season both sides of salmon with chipotle BBQ packet.
  3. Finely dice jalapeno, mango, and ½ of the red bell pepper. In a mixing bowl pour in ingredients with juice of 1 lime, and chopped cilantro. Mix all ingredients together and salt to taste if desired.
  4. Bring 1 ½ cups water to a boil. Add quinoa, reduce the heat to low and simmer for about 15 minutes. The grain pops and the outside germ will separate. Strain then run cold water over for about 3 minutes until cold. Transfer into a mixing bowl.
  5. Finely dice the other half of the red bell pepper. Finely chop mint. Add both to the quinoa along with honey, raisins, ½ of remaining olive oil packet and mix all together thoroughly. Season with salt to taste as desired.
  6. In a medium skillet with an ovenproof handle, set on medium-high and wait 45 seconds. Add remaining olive oil to pan and place salmon carefully away from you. Sear for 20 seconds and without turning salmon put skillet in preheated oven and cook for 8 to 10 minutes.
  7. Take skillet out carefully and flip the salmon with a fish spatula. There should be a beautiful sear on your fish. Finish with honey.
  8. Place quinoa salad nicely on a plate, then seared side up place salmon on top, then finish with mango salsa. Add a mint leaf if desired for garnish.

  • 2 skinless salmon fillets (6 oz each)
  • 1 lime (squeezed)
  • 1 oz jalapeno
  • ½ oz cilantro
  • 1 red bell pepper
  • 4 oz mango
  • ¼ oz mint
  • 2 oz raisins
  • 1 packet quinoa
  • 1 packet chipotle BBQ
  • 1 packet fine sea salt
  • 1 packet honey
  • 1 packet olive oil
