Chipotle BBQ Pork With Glazed Plums & Autumn Lentils


Smoky and sweet join forces atop juicy pork glazed in tangy chipotle barbeque sauce. Plums picked at their peak decorate the dish, made fork tender and caramelized from a gentle sauté. Their purples and reds dress the autumn lentils that provide a healthy and filling bed for the pork tenderloin.

  1. Preheat oven to 400 degrees.
  2. Rinse lentils then combine it with 2 cups water in a saucepan. Bring to boil.
  3. Reduce heat and simmer for 30 to 35 minutes or until tender, skimming foam from top if needed. Drain any excess water and season with 1 packet roasted garlic salt and ½ packet pepper.
  4. Rub pork with your packet of chipotle BBQ.
  5. On medium high heat add olive oil to a large ovenproof skillet sear 3 to 4 minutes on each side or until browned. Remove from heat.
  6. Quarter plums and coat with balsamic vinegar in a bowl. Add to skillet around the pork.
  7. Bake 15 minutes or until a meat thermometer inserted into thickest portion is 145 degrees.
  8. Scoop lentils onto a plate. Place some of your plums on the lentils. Slice pork and put on top of lentils and plums and pour the pan sauce over the whole dish.


  • 1 pork tenderloin (12 ounces)
  • 2 plums
  • 1 packet olive oil
  • 1 packet autumn lentils
  • 1 packet black pepper
  • 1 packet balsamic vinegar
  • 1 packet roasted garlic salt
  • 1 packet chipotle BBQ
